I want to backup my entire single server sp2016 farm. I would like to be able to back it up every hour. What is the best method/software I should use?

The same scripts will work. Either use Backup-SPFarm or backup the SQL databases. If you're backing up that frequently, you should consider backups from SQL instead of SharePoint in order to create smaller, less impactful backups.
