I have a Search Center wich is working pretty well but the indexed documents are in french.

As your description, you want to set the default query language as French for search in SharePoint 2013.
There is a hidden property called "DataProviderJSON" in the Search Results Web Part. One of the values of this property is called "FallbackLanguage" which by default is set to "-1". You can export the search web part and
open it using Notepad then set the value to 1036. After that, upload the web part into SharePoint, and use the web part to search.
