we have come across a situation where the SharePoint language pack hotfixes got installed automatically on few of the SharePoint servers in the farm via the windows update. we could see that the versions table in SharePoint Config database is  showing up with the latest patch version value. We want to revert back to the old SharePoint patch version. what we have done till now is the following -

1>在受影响的服务器上卸载语言包.

1> uninstall the language pack on the affected servers.

2>在这些服务器上重新安装语言包

2> re-installed the language packs on those servers

3>恢复了旧的SharePoint配置数据库备份，其中版本表显示了我们希望还原到的正确最新版本

3> restored the old SharePoint configuration database backup where the versions table was showing the correct latest version which we are looking to revert to

4>重新运行配置向导，运行成功.该网站正常启动，没有任何问题.

4> re-ran the configuration wizard and the run was successful. The site is coming up properly without any issues.

任何人都可以解释这是否是解决这种情况的正确方法，还是建议继续进行操作以通过断开服务器场中的连接来重建SharePoint服务器.

Can anybody explain if this is the correct way to handle this situation or is it advisable to go ahead and rebuild the SharePoint server by disconnecting it from the farm.

Important thing is you made this work and sites are up & running. But, language patches are sometimes required even though you might not have language pack installed on the farm. we run into issues after Oct feature pack for SP2016 and the fix was language patch.

Anyhow, most people would have done same step you did for restoring old farm.
