We have added a new server (app/search server) to our farm (so the current topology becomes: 2 WFE servers, 3 APP servers and 1 DB server with clustering ) and evaluating our options to run various components of search. There are less than 10 million searchable items in our farm. Hence, we are using 2 WFEs to run the query component. The RAM of the newly added server with 4 core processor is 16 GBs,  Is it a good practice to run the all the components except for query components on one app server which is not serving any other SharePoint services?

The advantage to doing it that way is that it will get the load of Search Crawl and Content processing off your other App servers.  Running Search on the same server as other App services can lead to performance issues when a Search Crawl kicks off.  That's one of the reasons for the new dedicated Search Minrole in SharePoint 2016.

Having said that, I wouldn't recommend the specific design you are describing.  Having only one server dedicated to Search makes it a single point of failure.  You really should have at least 2 servers running Search to preserve a Highly Available environment.
