I have a Windows 10 IoT v.10.0.16299.15 running on Raspberry Pi 3B v 1.2.

I have plugged a 7" touch screen via HDMI+usb (for powering and touch). My display has resolution 1024x600. Unfortunately I can't set this in my IoT. It works (almost) fine with 1024x768 60Hz. Almost means, that part of the desired view is not visible. I can't set it with Device Portal, because it is not on the allowed resolution list.

If it does not work i afraid you need to build your own BSP (Board Support Package) to support 1024x600 as Display Resolution.
