Ok, just setup the RPi3B via IoT Core Dashboard and it booted up fine at default resolution of 1920x1080.    I wanted to get remote display working but at 1920x1080 I got white screen.  So as per Microsoft's advice, I tried to change my RPi3B's resolution to 800x600.   My first try resulted in some stuck screen w/ purple grid lines across.  I suspect I may have setup the wrong refresh rate.   So I recreated the SD card again and this time I made sure I used 800x600 at 60Hz.    I think this time I made it a bit further:  I got to the blue window logo screen and a dotted circle below it.    It's been almost 2hr now and it's still there so I suspect I'm stuck somewhere.    Any clue?    My main objective is to get remote display working so any other suggestion would be greatly appreciated.  Thanks in advance!
