I would like to be able to approve all tasks for a resource in one go in Project server 2010 (as the check button in the last version 2003 allowed).

I'd suggest to apply a filter on the resource name (either create it from the filter feature in the ribbon or use the automatic filter available directly in the resource column header). Then use the first column automatic filter in the header, click on "select all" and approve.
