You should have a folder under %_WINCEROOT% called \Updates that should contain a .HTM file for each update you have installed.  You can also use the "CE Update Check" utility in Platform Builder to determine which updates you don't have installed, which basically tells you which ones you DO have installed.  Note, however, that CE Update Check only works for CE 6.0 R3 if you have installed the 2009 Rollup update.
