When I enter new tasks into Project Professional, I find that the Resource % allocation automatically reduces even though it shouldn't. A task of 1 day with 1 task gets a duration of 2 weeks due to the reduced Resource % allocation.

I guess you are using Project 2007, just check if the Tasks are set as Fixed Duration (FD) with Effort Driven(ED) enabled. So, say a task of 1d with FD & ED which was assigned initially to 1 Resource gets another resource added to it; Project will adjust their Unit to 50% - it shows a small triangle to refelect the message which gives you 2 options to select from, while adding an additional resource - Reduce Duration (so that task end sooner, but requires same amount of Work/person.) OR Keep Duration constant, but increase the Work as task requires more person-hours).
