Based on other similar questions on this and other forums, I have come to the conclusion that in order to grab the email address from the user in the people picker, I will have to use a button action so that it fits into our process.

However the issue I now encounter is, the people picker will return the email address in preview more as expected, however after you publish the form, if you either "add item" or go to the form link and do it there, I get a message returned saying there is an issue with your connection,. But this works correctly in preview mode.
