I'm having some issues to configure a correct synchronization between  AAD and Windows AD since system shows "Users will not be able to sign in Azure AD using their on-premises credentials" even if correctly set and shown with contoso.local and contoso.com. I would like to synchronize both usernames and password

The recommended approach is not to use non-routable domain names. Any UPN that contains an non-routable domain, for example .local (like [e-mail]), will be synchronized to an .onmicrosoft.com domain (like [e-mail]).
