On the out of box SharePoint Approval workflow 2010, when a task is deleted because the approver doesn't need to approve and was assigned in error, the whole task shows rejected even though every other task was approved and completed.  How can I remove an approver/task without getting the workflow rejected. Our team adds different approvers each time on the workflows and sometimes adds the wrong person and will need to make the correction in the workflow. There are different amounts of approvers each time and all need to have their approval so I can't use the percent approved feature. Is there someway to make corrections to the workflow to allow for errors in adding the wrong person to approve?

It’s not supported to achieve your requirement. OOB Approval Workflow is unable to check if the reject result is caused by wrong person or the current item is really rejected.
