Hi,
Yes but not of the "Disk" as a resource. Your unmanaged disk is stored on blob storage and you can take a snapshot of that Blob storage: https://docs.microsoft.com/en-us/rest/api/storageservices/Creating-a-Snapshot-of-a-Blob and https://docs.microsoft.com/en-us/azure/virtual-machines/windows/incremental-snapshots for guidance
