Did you receive any error message when the issue occurred?

Please refer to this article to check for and install the latest Office updates, then restart your computer to see if Visio can works properly. If the issue persists, it is recommended to start Visio in safe mode (Press "Win + R", type "visio /safe", press Enter.) to find out whether the problem is caused by an add-in.

If the issue still exists after the above steps, please collect some related error logs via Event Viewer when Visio crashes, then we can do further analysis about your issue.
