Find the Service App in Central Admin -> Manage Service Applications. Highlight it. Click Delete in the ribbon. That's it. You can then recreate it however you need to, either via Manage Service Applications or PowerShell (I'd always recommend PoSh, but the second best option is creating it in Manage Service Apps).
