Quick question for you i have added a new server to my 2-tier sharepoint farm I previously had the following:

Now i see when i look in IIS that all my other sites created in the other SharePoint server are also present on my new SharePoint server (expected).

My question: Were the additional sites in my first SharePoint server replicated to my new SharePoint server? or was that data simply pulled from SQL and then displayed by IIS in my new SharePoint server?

The sites were all created in IIS based on their representation in the Config database.  But they are full workable copies of the sites (since the data is all stored in the content database anyway).  If you configure a Load Balancer in from of the two SharePoint servers you can serve the sites from either server.  So yes, they were replicated, but they were replicated via the definitions stored in the Config database.
