Have you looked at using Kinect Common Bridge v2? The feedback that was received from v1 was they wanted Kinect data in Matlab not using the SDK from within a Win32 application.

By using KCBv2Lib you should be able to create a driver or plug-in for Matlab (to overcome the data structure limitations) to bring the data over. At a recent hackathon, I worked with one developer that was able to load the library and get data into the editor, but came across the C structures issues.
