So I have a workflow design question - when I create an approval task, to wait for its completion I can have the next step as

1) "The Contents of this loop will run repeatedly while: Task:Outcome is not Approved" OR

2) I can just have  "If variable: Outcome is equal to Approved"

Is there a preferred option between the two ways of doing it?

You could just use "If variable: Outcome is equal to Approved" after the "assign a task" action or "start a task process" action.
