We are running Project Server 2010 with no fixes/cumulative updates. The use of the application is limited and till now we have not faced any problems which would need a fix.

Is it still a good idea to update? Or might that introduce new problems?

Is your farm RTM? If so I would at least look at rolling out SP1 + June 2011 CU. Whatever update you do deploy, fully test this on a replica test environment before deploying to Prod. Also ensure you have full roll back plans in place for each environment.
